When it comes to ramen, there is an important rule; the soup will dictate the overall taste of the ramen. We understand this and focus on the umami, the framework of ramen. The result? The best ramen you’ve ever had. So be sure to come and try it for yourself!

    A quick history of ramen

Ramen began back in 1800s China, when the idea of noodles in a soupy broth moved with Chinese immigrants to Japan in the late 19th or early 20th Century. Chinatowns sprung up around Japan, spreading the popularity of delicious ramen throughout the country.

In 1947 Fukuoka, the world-famous Hakata Tonkotsu ramen was made by mistake when chefs over-boiled the soup, making the pork broth extra milky and very delicious! Fast-forward to post-war Japan, wheat started being made into ramen noodles, and more regional varieties of ramen became available across Japan. The rest is history!

Authentic ramen is a variety of Japanese noodle soup, served with a range of toppings including sliced pork, seaweed, and green onions. Different styles feature in the different regions of Japan and each one includes unique ingredients to create its own distinctive flavour. Whether you favour a flavourful soy-based broth or prefer the lighter miso-based tastes, there’s something for everyone at the ramen places in Fitzroy!
